The email gets turned into a PDF, and the attachments go next to that PDF. You choose one of three options: Save each conversation into a separate PDF, Merge all conversations into one PDF, or Save only attachments.

Yes, you can do either one. If you only need one label, open that label’s menu and click Backup label to Amazon S3 …. For the whole account, click the Backup to Amazon S3 toolbar button and then pick Setup backup of this Gmail account to Amazon S3. If you need to cover several accounts at once, click Setup backup of multiple Gmail accounts to Amazon S3.
